
Smoked Mackerel with Vegetables
zucchini red and 1 yellow bell pepper onion olive oil white wine salt, pepper, basil smoked mackerel fillets (3.5 oz each) whole wheat toast
1 portion contains about 450 calSlice zucchini in 2 inches long, thick strips, slice bell peppers and cube onions. Heat oil in a pan and sauté onions. And zucchini and bell pepper strips and sauté together. Pour in white wine and steam vegetables firm to the bite. Season with salt, pepper and basil. Arrange vegetables on a plate with the mackerel fillets. You can serve this dish warm or cold. Serve with whole wheat toast.
