Pasta-Spinach Casserole

Ingredients (for 2 People):

whole grain pasta mushrooms onion canola oil spinach (fresh or frozen) light cream tomatoes light sour cream egg skim milk grated cheese (cheddar) salt pepper nutmeg

1 portion contains about 500 cal

Cook pasta for about 8 minutes. Slice mushrooms and dice toma­toes and onions. Heat oil and saute onions and add spinach. Season with salt, pepper and nut­meg and pour in cream. Mix sour cream with egg and milk and season well. Grease a casserole dish with oil and add pasta with mushrooms, tomatoes and spin­ach. Pour the sauce on top and sprinkle with cheese. Cover the dish with aluminum foil and bake at 375°F for about 50 minutes.
