Sweet N' Sour Cod

Ingredients (for 2 people):

soy sauce  •  fennel seeds  •  lemon  •  cod (fresh or frozen)  •  oyster mushrooms  •  leek stalk  •  carrots  •  vegetable juice  •  sweet chili sauce  •  sesame seeds  •  salt and chives  •  brown rice

Preparation

Mix soy sauce, fennel seeds and lemon juice and sprinkle over fish fillet. Slice mushrooms, leeks and carrots. Bring vegetable juice and chili sauce to a boil, then add mushrooms and vegetables and after that add fish and marinade. Season with some salt, cover and cook for about 8 minutes. Serve fish on a bed of vegetables and sprinkle with sesame seeds and chives. Serve with brown rice, cooked per instructions.
