Chopped Greek Salad with Garlic-Tomato Toasts

Ingredients (for 2 people):

Chopped Greek Salad  •  red-wine vinegar  •  extra-virgin olive oil  •  chopped fresh dill or oregano or 1/2 tsp dried  •  garlic powder  •  salt  •  freshly ground pepper  •  chopped romaine lettuce  •  chopped cooked chicken (about 6 ounces)  •  medium tomato, chopped  •  medium cucumber, peeled, seeded and chopped  •  finely chopped red onion  •  sliced ripe black olives  •  crumbled feta cheese  •  Garlic-Tomato Toasts  •  whole-wheat country bread  •  small clove garlic, cut in half  •  extra-virgin olive oil  •  small plum tomato, cut in half  •  kosher salt & coarsely ground pepper to taste

Preparation

Chopped Greek Salad

  • Whisk vinegar, oil, dill (or oregano), garlic powder, salt and pepper in a large bowl. Add lettuce, chicken, tomato, cucum­ber, onion, olives and feta; toss to coat.

Garlic-Tomato Toasts

  • Grill or toast bread. Rub one side of the toasted bread with the cut-side of a garlic clove half and drizzle with extra-virgin olive oil. Rub with the cut-side of a tomato half. Sprinkle with kosher salt and coarsely ground pepper.
