Sweet N' Sour Cod

Ingredients (for 2 people):

4 Tbsp soy sauce  •  1/2 tsp fennel seeds  •  1 lemon  •  14 oz cod (fresh or frozen)  •  7 oz oyster mushrooms  •  1 leek stalk  •  2 carrots  •  3.5 oz vegetable juice  •  2 Tbsp sweet chili sauce  •  1 tsp sesame seeds  •  salt and chives  •  2.5 oz brown rice

Preparation

Mix soy sauce, fennel seeds and lemon juice and sprinkle over fish fillet. Slice mushrooms, leeks and carrots. Bring vegetable juice and chili sauce to a boil, then add mushrooms and vegetables and after that add fish and marinade. Season with some salt, cover and cook for about 8 minutes. Serve fish on a bed of vegetables and sprinkle with sesame seeds and chives. Serve with brown rice, cooked per instructions.
