Cabbage Salad with Turkey

Ingredients (for 2 people):

1/2 lbs white cabbage (1/2 head)  •  1 small red bell pepper  •  1 chili pepper  •  1 apple  •  1 small banana  •  vinegar  •  lemon juice  •  2 Tbsp apple juice  •  2 Tbsp water  •  2 Tbsp canola oil  •  10 oz turkey breast  •  salt and pepper

Cut cabbage in fine strips, add salt and briefly mash with a potato masher. Finely chop chili pepper, cut bell pepper into strips and cut apple and banana into thin slices. Combine all ingredients. Prepare a dressing from vinegar, lemon juice, apple juice, water and 1 Tbsp of oil. Pour over the salad and let sit for 30 minutes. Heat the remaining oil in a pan. Cut turkey breast into strips and fry until golden brown and crisp. Season with salt and pepper and add to the salad.
