Mozzarella with Tomatoes and Spinach

Ingredients (for 2 people):

4.5 oz mozzarella  •  2 tomatoes  •  3 tsp olive oil  •  7 oz baby spinach  •  1 Tbsp pine nuts  •  1 oz grated parmesan  •  salt and pepper  •  balsamic vinegar  •  mustard  •  2 slices whole wheat bread

Preparation

Slice mozzarella and tomatoes and lay them out on a plate. Season with salt and pepper and sprinkle with balsamic vinegar and 2 tsp oil. Wash spinach and prepare dressing from vinegar, some water, 1 tsp oil, 1 tsp mustard and spice. Pour the dressing over the salad and sprinkle it with pine nuts and parmesan. Serve with whole wheat bread.
