Tofu-Pasta with Beans
Ingredients (for 2 people):
2.5 oz whole grain pasta • 12 oz green beans (fresh) • 1 onion • 7 oz cherry tomatoes • 7 oz firm tofu • 2 tsp olive oil • 1.5 oz grated Parmesan • salt, pepper, basil and parsley to taste

Boil beans in slightly salted water and strain them. Chop onions, halve tomatoes and dice tofu. Heat oil in pan and sauté onions. Add tofu, beans and tomatoes and season with salt, pepper and basil. Sprinkle with chopped parsley and grated Parmesan. Cook pasta al dente per instructions and serve with beans.
